I feel a little bad for not sharing this recipe sooner. Especially since some of my friends live overseas & can’t buy maple syrup. While this definitely isn’t maple syrup – I think it’s better! I think it tastes a bit like caramel sauce & Ezra calls it “special sauce”. We usually eat it for breakfast with pancakes or waffles, but I’ve drizzled it on chocolate cupcakes as well as ice cream. Whatever you call it, however you end up using it, it is delicious! Enjoy!

1 1/2 cup sugar
3/4 cup buttermilk (or 3/4 teaspoon of vinegar or lemon juice & milk to fill 3/4 of a cup)
1/2 cup butter
2 Tablespoons corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract
In a saucepan, stir together the sugar, buttermilk, butter, corn syrup, & baking soda. Bring to a boil, and cook for 7 minutes. Remove from heat & stir in vanilla.
Ready in: 15 minutes Yields: 2 cups
One piece of advice: use a big pot, not a saucepan. This really bubbles up a lot & with all that sugar you don’t want it running out & causing a fire. Not to mention that you don’t want to lose one drop of this delicious syrup!
